Pan-fried Cornbread

Mix
1 cup corn meal
2 Tblsp sugar
1/2 Tspn salt
1 Egg
1/4 cup oil (olive works for me)
1/2 cup milk
Stir it up, lightly grease 7" black iron pan
Pour in mix, cover tightly
Cook about 15 minutes at no more than a simmer so bottom doesn't burn, ready when meal doestn't stick to a fork.
Great for breakfast or with chili or just a snack

Thank you for posting this! I was trying to think of something to do for dinner tonight with the leftover marinara sauce I made this weekend... I think I'll use it to make chili and have cornbread with it!

I did make chili but realized at the last minute that our cast iron pan is out in storage in the garage.
So I ended up making cornbread muffins instead.
Next time! I'm getting the pan back in the house this weekend.
