this is actually very helpful and not too late, thanks!
i am going to cook the heck out of a turkey, but i also promised my honey something special for the vegetarians. after reading the article, i am even more assured that I will do it from scratch and it will be worth it. 

i don't have time before thanksgiving, but if people are interested i can post the recipe that i use.  basically, i make a savory seitan-ish roulade with goatcheese walnut cranberry wild rice stuffing.  made it last year and it was a hit even with the carnivorous folk.
