My boyfriend and I have been to two Thanksgiving dinners this month and the third looms next week.  Shocked  I'd love to hear everyone's favorite tips and recipes for using up the leftover turkey, tofurkey, mashed potatoes, stuffing, veggies, etc.! Here are some of mine...

Mashed potatoes:
Potato croquettes with dill or chives
Pureed soup like potato leek
Re-mash with some milk and grated cheese to top off shepherd's pie or casserole
Savory quick breads or muffins like potato cheddar muffins

Cranberries:
Ice cream!!! As a topping or to mix into milkshakes
Spread on bagels with or without cream cheese
Stir into pancake batter, maybe with a little orange zest/juice
Stir into oatmeal (leftover pie can also make a nice oatmeal topping)

Rolls:
Croutons

Turkey:
I did this the other night- stir fry with veggies in a mixture of hoisin, garlic, soy sauce, sriracha, and peanut sauce. Serve over udon noodles garnished with sliced scallions, mung bean sprouts, and peanuts
Add to Asian or Mexican soups or corn chowder
Enchiladas
Turkey pot pie
Tetrazzini
Chef salad

I have to admit, my absolute favourite thanksgiving leftover dish is sludge.  Mashed potatoes, turkey, stuffing, and gravy, all mixed together and heated up into a gray, lumpy mass. It's WONDERFUL. Wink

My standards:

Mashed potatoes are great for gnocchi or pierogi dough.

Turkey almost always becomes bouchées a la reine. I use my mom's super-easy recipe that requires no real cooking. Buy frozen puff pastry cups. While you're baking them, mix one can cream of mushroom soup with one can cream of chicken with herbs. Throw in a little sherry and milk, add turkey, et voila – an elegant Euro dinner perfect for lazy post-Thanksgiving days.

Thanksgiving Breakfast!
-roast turkey hash (or turkey/potato croquettes)
-fried runny egg
-mix cranberry sauce with Master Sauce for topping/dipping
-leftover apple cider wine mixed with fizzy water for mamosa styled drinks!
