The only really excellent buffet experience that I've had in Vermont is at The Essex. Great housemade charcuterie, fluffy made-to-order waffles and gorgeous fruit and ice sculptures.
The spread is Souza's is great, but I tend to eat very little of it to save room for meat. The weekend night buffet that I had at Curtis' BBQ in Chester overwhelmed me with porky goodness, but two hours is a little far for dinner after work.
Any recommendations for when I'm feeling gluttonous?

Fire and Ice in Middlebury used to have a good buffet, not sure if it still does, but I liked the salad bar, bread bar, and soup option.  I guess it's not quite a buffet...

I wouldn't say it is a great buffet but if you are in the mood for that sort of eating try the dining hall at Champlain College!  I am serious!  For around $7.00 at lunch time you can get a nice meal.  I think it is only a dollar or so more at dinner.  They have many choices as long as school is in session.  In the summer it is not as nice as there are not as many selections.  On weekends they have made to order omelettes.

Thanks, mailgirl! I love the breakfast buffet on weekends at UVM, so now I'll have to try Champlain. I am obsessed with cafeteria food.

Have you tried St Mike's?  My husband does not like the way it is set up.  I though it was fine.  Which UVM dining hall do you patronize?
