Side of beef!

I am SO excited!! 

I'm taking delivery today of a whole SIDE OF BEEF from North Hollow Farm!! (http://store.vermontgrassfedbeef.com/packages.html)

We've been eating down our freezer for months (and saving up money) to make room for the eight cubic feet of beef this represents.  The price is fantastic, and I got to decide what sort of mixes of cuts I got.  I'm getting a tongue.  Never had tongue before!  I need to find some recipes for how to make yummy tongue!   I'm also getting liver, and some soup bones, but I forgot to ask for oxtails, OOOh well. I'm also getting a whole tenderloin (which they didn't have already cut, so I am actually getting a fresh tenderloin recently processed, we're having tenderloin for dinner tonight. )

Since my husband's office is in Montpelier, and they make deliveries to Hunger Mountain Food Coop every Wednesday, they're not even charging me for delivery.   I'm meeting them at the office then dashing home with a car full of treasure! Whooo!

How did you prepare your filet? Was it great? I'm very jealous.

I'm sad to say that the day didn't cooperate and I ended up having to freeze the filet for the future. *sigh*  I -did- sneak a bit of a nibble of it, raw, when I cut it into two bits (one tubey bit, one chunkier bit).  I'll probably wellington the little darling when I have time.

That sounds amazing! My husband and I got a beef share last year from Stony Pond farm and it was AMAZING!!!

Oh we're enjoying it so much.  I love the flavour of the beef.  Now I need to find a good way to prepare some short ribs in the crockpot.
