Wanted to post a rave about Stebu Sushi on Main Street in Waterbury (http://www.stebusushi.com/).

I'm not an expert on sushi things, but I know when I like something.  Everything I've had at Stebu is fresh and delicious, and reasonably priced!  I'm fairly hooked on his queen rolls, which are salmon over a California roll, but there are loads of other interesting options and combinations.  He's also willing to build something to order, too!  A queen roll, which is good sized, is $8.  The dining room is small, bit clean and nicely decorated.  They also have some ready made things in a cooler up front, so you can pop in to pick something up fast for lunch.  Totally worth heading out this way!

Sounds great! Stebu is now in the 7 Nights dining guide!

The chef's creations sound pretty enticing. I definitely plan to stop here next time I'm in Waterbury.

I finally stopped by yesterday and was impressed and pleased with the choices and the preparation. You can have good sushi in Vermont.

That's great to know.  I very selfishly do NOT want them to close because I love having them as a lunch option. Smiley

Great place for sushi - but so random!  Little tiny place hardly anyone knows is there... but funniest of all are the hours!  He used to only be open midday Tue-Thurs but now I see on his website he's added in Friday.  Once asked him why such odd hours and he said since he's a one-man show he likes his time off.  Goes to show he's really passionate about what he's doing, and not just in it for the business.  If you live in that area, you can time your dump drop-off to correlate with grabbing some sushi at his place and then pop over to the Alchemist afterwards as soon as they open in the late afternoon.  All in a day's journey in Waterbury!

I think he's also working at some other place, but I'm not 100% sure on that. Smiley  Still loving it there. Smiley
